Chicken

1 1/2 lbs boneless, skinless chicken breasts, cut into bite size pieces

3 TB flour

1 tsp Italian seasoning

1 tsp salt

1/2 tsp ground black pepper

2 TB olive oil


In a large bowl, stir together flour Italian seasoning, salt and pepper.  Add chicken and mix until chicken is coated.  Heat 1 tablespoon of the oil in a large skillet over medium heat. Add chicken and cook, turning occasionally, until lightly browned and just cooked through, 3–4 minutes. Transfer to a bowl and set aside.

Heat the remaining 1 tablespoon oil in the same skillet over medium heat. Add the artichoke hearts, mushrooms and red peppers. Cook, stirring occasionally, about 5 minutes. Add the wine and broth. Cook until the liquid is reduced by half, about 5 minutes. 

Add the chicken to the skillet and cook, tossing occasionally, until heated through and the liquid thickens slightly, about 4 minutes.   Place pasta in a bowl and top with contents of skillet.  Garnish with grated parmesan cheese.

14 oz can quartered artichoke hearts
8 oz sliced mushrooms

12 oz jar roasted red peppers, cut into strips
1 cup chicken broth
3/4 cup dry white wine

3/4 cup linguini, cooked 

4 boneless, skinless chicken breasts

1 cup panko bread crumbs

2 tsp Italian seasoning

1 tsp salt

1 tsp ground black pepper

1 TB olive oil


Pound chicken breast to 3/4 inch thickness.  In medium bowl add bread crumbs, Italian seasoning, salt and pepper.  Coat chicken breasts with bread crumb mixture. I large saute pan, heat oil and butter over medium high heat.  Place chicken breasts in pan and cook on each side for 3 minutes until browned.  Remove chicken from pan.  Reduce heat to medium.  Add mushrooms and garlic.  Cook for 5 minutes, stirring frequently. Add flour to mushrooms and stir until all mushrooms are coated with flour. Cook for 2 minutes.  Add chicken broth and marsala wine.  Stir and cook for 3 minutes.  Places chicken breasts in pan.  Cook on each side for 5 - 6 minutes.

Mediterranean Chicken 

4 TB butter
8 oz sliced mushrooms

1 tsp granulated garlic
2 TB flour
3/4 cup chicken broth
3/4 cup marsala wine
